Home Made Cheese Cake

This is my first time make cheese cake. What inspired me to make it? My husband, Alfonso's birthday lor... 1st year celebrate his birthday after we are married. As a wife, sure must does something on his birthday. Well, trying to see am I a '入得厨房,出得厅堂' good wife or not :)


I bought a bakery book from Popular Bookstore: Delicious Cakes by Amy Heng. This is the recipe of Classic Baked Cheesecake.

Ingredients
Base:
120g plain flour
60g self-raising flour
55g soft brown sugar
1/2 tsp lemon rind
80g butter (diced)
1 whole egg

Filling A:
2 tbsps lemon juice (mixed with 300ml UHT whipping cream, stand for 10 mins to become sour cream)
600g cream cheese (at room temperature)
100g butter (softened), 1/2 tsp vanilla essence
70g caster sugar, 2 tsps lemon rind
30g cornflour, 2 whole eggs, 2 egg yolks

Filling B:
60g caster sugar, 2 egg whites

Utensil needed
9" loose-base cake tin

Method:
Base: Preheat oven at 180'C. Lightly brush a 9" loose-base cake tin with corn oil. Place all dry ingredients in a mixing bowl. Add in butter and beat at low speed until mixture resembles breadcrumbs. Add in egg and beat until mixture binds. Press mixture into tin and prick holes with a fork. Bake for 20-25 mins.

Filling (A): Reduce oven temperature to 150'C. Place cheese, butter, vanilla & sugar in a mixing bowl. Beat until creamy. Add in rind, cornflour & eggs and beat until just combined. Add in sour cream. Leave aside.

Filling (B): In another mixing bowl whisk filling (B) at high speed until stiff (70%).

Fold #2 &#3 together lightly with a hand whisk. Pour into prepared base of #1.

Place tin in steam bath and bake for 2 hours. Take out from oven and immediately run a sharp knife along sides of cake. Let cake cool at room temperature before placing in the fridge. Brush some glazing on cake if desire.



Cream cheese. Normally, cheese is quite expensive... ~RM16+. Now, this only RM6.90... bought from Tesco.

Put into the oven... brand new oven... Cornell (made in M'sia) RM245 is cheapest... but we bought RM275 + warranty under Tesco = RM 325 !!! Haiii...


Looks good, is it? :)


After 2 hours... external looks very crunchy... but internal is a bit wet.


OK... put into oven again... and baked around 30mins...


Still looks a bit wet, right? No worry... it is ready to eat... see, I already decorated my cheesecake :)

It is very delicious... it is truth... I like it even though I'm not really like to eat cheesecake. I give myself 4.5/5 :)


Lack of 1 piece... why? For testing mah...

Rasa Sayang's Seafood Dinner Buffet

Venue: Spice Market

As pre-celebration of Alfonso's Birthday.
(RM138+15%)-20% for Citibank CC holder.

Overall:
Environment: ** (As 5 star hotel, I expected have a great decoration)
Food Variety: * ( Not many choices if this is a Seafood buffet... more to like international buffet... normal sushi, bread, salad, desert, chinese style soup/dishes, local food: satay etc)
Food Taste: * (Normal. I expected higher actually since it is in high class hotel)
Value for Money: * ( This is a not proper Seafood Buffer. Very disappointed.)

Even though the food is not a preference to my stomach, but we have a good time.
































Herbal soup. Only this one impressed me. Very nice.
