Sample... original look

Its texture... hmm... not soft enough...

Decoration.... was using icing frosting for topper..

Another decoration... just added in some coco powder

Usually... cupcake with topper just nice to look... but not nice to eat.

I never tried it which with the topper... because I know its taste very sweet... and some more these cupcakes were over baked... Haha... for the cake... it was a bit sweet.

Now I know the topper is not easy to decorate. I still need to have more practice... Honestly, I a bit give up already... wanna take back my words which I telling my friend I will do the cupcake for her wedding... :p

BEFORE

AFTER

Chocolate Indulgence Making

After a cheese cake making... my confidence in bakery was increased a bit. OK, I put myself to the higher 'stage'... make chocolate indulgence which is Alfonso's favorite cake.

Sponge Cake: eggs, caster sugar, chocolate emulco, plain flour, corn flour, self raising, cocoa powder, corn oil.

Before... bake in oven.

After....

Errr... it does not look like a 'normal' sponge cake.

It was hard and totally not raise... OK, just put it aside first.

Syrup: instance coffee powder, full cream milk

After mixed.... hmmm... was it supposed to look like? *doubt*

OK, I should use UHT milk instead of full cream milk. But I can't find this milk, so used rich whipping cream :p

Yes, it was a bit thicker if compare to the previous one.

Mousse: UHT whipping cream, dark chocolate & white chocolate.

Chopped the dark chocolate for Chocolate Topping.

Alfonso used his full energy to whisk cream until slightly thickened.

Yeah... this was what the mousse looks like :)

OK, went for 2nd try for the sponge cake making. Again, Alfonso used his full energy to whisk eggs and sugar at HIGH SPEED until thick and creamy. Pity Alfonso.

Thick and creamy or not? Nope? OK... continue...

How about now? Guess should be OK now.

Added in the rest of the sponge cake ingredients.

Again, same result... hard and thin. We tried 3 times already. And some more Alfonso purposely went out and bought the ingredient to try it out. We can't figure our what wrong was that. Give up... :(

Since the mousse and syrup and already bought the rest of the ingredient for this Chocolate Indulgence... hmm.... let's continue to make it out.

Topping 1: Whisk the UHT whipping cream until creamy.

Spread the whole cake with a thin layer of whipping cream.

Topping 2: Heat cream over simmering water. Add in chocolate and stir until smooth. Add in butter.

This is what it looks like.... successes! :)

Pour over chocolate topping (topping 2).

Done! (but cannot put it into mouth)

After testing... sisa of sponge cake.... Tak boleh pakai.... force to feed to the fish which in the pond of my apartment...

FAILED!!!

Anyway, if someone here want this detail recipe, just drop me a msg here :)

Portuguese Egg Tart Making

******************************************
Date: 05 Dec 2010, Sunday

Result: FAIL

Bought all the stuff from Tesco. Actually not so many... for egg tart making. Just a simple stuffs needed. Here is it...

For Puff Pastry->
250g plain flour, 1/4 tsp salt, 30g butter, 130ml water, 120g pastry margarine ( I can't get it from Hypermarket, so I decided not to put it... but it is WRONG!)

For the Filling->
250ml fresh milk, 80g caster sugar, 200ml UHT whipping cream, 1 tsp vanilla essence, 4 whole eggs (B), 2 eggs yolks (B).

These are my puff pastry which without putting pastry margarine.
The step to make this puff pastry is quite troublesome: roll->fold->wait... repeated few time.

Filled with the filling...

Alright... let put it into oven in 190'C for 30mins...

Here it is.... looks good? isn't it?

But...

The puff is in half raw...!!!

and... it is not a puff pastry!!!

Why? because i did not put pastry margarine... now I know it is an important ingredient in this recipe...

Technically, this is what Portuguese Egg Tart looks like...

Not this....
Gosh... actually I got 12 pcs.... how do I manage it?
The reason I failed is no pastry margarine and put wrong direction of the heat so made the puff in raw.

The filling is nice actually...

OK, let's get another try NEXT TIME....
